- 1 cup Leftover Pulled Pork
- 1 Chipotle Black Bean Patty
- 1 Poached Egg
- 2 tbsp Distilled White Vinegar
- 1 tbsp Olive Oil
- 2 tbsp Oaksteak BBQ Sauce
- Ted & Barney's/Dr. Bacon's Seasoning(s)
I start this with some left over pulled pork (recipe in the lunch & dinner section). Fill a small sauce pan 3/4 full with water and about 2 tbls distilled vinegar and bring to a simmer, cover and reduce heat to hold that temp, this will be for poaching the egg. Grab a pack of pre-formed chipotle black bean patties (available at most mainstream grocery stores). Heat up a second sauce pan with a little olive oil, crumble the black bean patty and heat until hot, remove from pan and place on a plate to the side. Add pulled pork to the pan and heat until hot. Mix back in crumbled chipotle black bean patty with the pulled pork and add a little Oaksteak (Spicy) BBQ Sauce. Cover and reduce heat to low.
Crack your egg into the hot water and vinegar, cover and let sit for 2-4 minutes until the egg is poached to a hardness of your liking. When done, put the pulled pork and chipotle black bean mixture on a plate, and place the poached egg on top. Sprinkle with Ted & Barney's and/or Dr. Bacon's seasoning(s) to taste.
